Fine, white fish, oily fish, shellfish and seafood caught fresh daily are the basic ingredients for the delicious
dishes that have made San Vincenzo famous. Restaurants such as Fulvio Pierangeli’s "Gambero Rosso" draw gourmets
from all over the world.
The fresh, flavourful dishes they offer are usually based on fish, often with the inclusion of other local products,
dressed with excellent olive oil and accompanied by the fine wines produced in the area.
The wine route, where besides others the excellent wines of the DOC Val di Cornia are produced, passes nearby.
Today, the old fishing village of San Vincenzo, where life and gastronomic traditions have always been closely tied to
the sea, has rediscovered the virtues of "oily" fish - anchovies, sardine, and two species of tuna including the
Palamita are cooked to traditional and newly-created recipes.
